There aren’t any freezers at the Piada restaurant in Chanhassen, ensuring that the ingredients that go into the restaurant’s made-to-order piadas (think wrap sandwich), pasta bowls and salads are as fresh as possible, says chef Matt Harding, director of culinary at Piada. The Ohio-based chain restaurant made its Minnesota debut this winter, and it’s gained a loyal following of customers who make their own creations—as everything on the menu is completely customizable. Harding describes the restaurant as “chef-driven” and says it has the best calamari he’s eaten. Try the calamari salad or piada to see if you agree.
