Chocolate Zucchini Cake Recipe

Ingredients

 

  • 2 medium zucchini (1 1/2 cups shredded)
  • 1 1/4 cups all-purpose flour
  • 1 1/4 cups self-rising flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp. cinnamon
  • 3/4 tsp. baking soda
  • 1 cup unsalted butter, room temperature
  • 1 3/4 cups granulated sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 cup buttermilk

 

Directions

Preheat oven to 325 degrees.

This is the cookie that started it all. The oatmeal chocolate chip was the first recipe that Maple Grove native Annette Gustafson ever entered at a fair and won a ribbon by coming in fourth place. (Her molasses cookie won a blue ribbon at the 2016 State Fair.) She has recently opened an online bakery so you can order her cookies already baked, but if you’re in the food barn, look for Gustafson’s 2017 entry.

German water bread, named for the dry yeast dissolved in water, makes the perfect holiday dessert for the entire family. This recipe was given to Jean Brown from her husband’s mother—his grandparents being from Germany—and it has now become a family tradition, down to the grandchildren. “I make it all the time,” Brown says. During Christmastime, she uses green and red sugar instead of the traditional white to add a special holiday touch.

Cranberry, Walnut (or Pecan) and Orange Muffins
(Makes 12 muffins)

Ingredients:

  • 2 navel oranges
  • 1 cup cranberries, coarsely chopped
  • 1 cup chopped walnuts or pecans
  • 2 cups all-purpose flour
  • 1 Tbsp. baking powder
  • 2/3 cup plus 1 tsp. sugar
  • 1/3 cup Autumn Harvest’s Meyer lemon or blood orange olive oil
  • 1 egg
