Holiday Recipe: Sue Eichstadt’s Popcorn Wreaths

A festive holiday treat delights the taste buds.

When Sue Eichstadt asked for the recipe for a popcorn wreath at a company potluck 20 years ago, she never imagined that it would become her own signature dish. The combination of popcorn, M&Ms, marshmallow and roasted nuts provides a sweet-and-salty punch to the taste buds, and the light crunch provides a great contrast to the chewy cookies that often dominate holiday spreads.

1 stick butter
1/2 cup oil
16 oz. marshmallows
Melt all the above in double boiler.
8 cups air-popped popcorn
1 cup peanut M&Ms
1 cup dry roasted nuts
Stir together the marshmallow mixture and the popcorn mixture, and pour into greased Bundt pan. Let stand overnight. Turn out on plate and cut into slices, preferably with an electric knife.
