Not only is Vicki Eide a traditional naturopath, guiding people towards safe, natural ways to a healthier lifestyle, she’s also a self-described “cookie monster.” Eide’s cookie obsession, however, was hampered by her gluten sensitivity.
Given this, it’s no surprise that when she started her company, Prairie Kitchen, in 2011, she had one simple goal in mind: Create a very delicious cookie. It would be textured, substantial, and you wouldn’t even notice a very important detail: It would be gluten free.
Her inspiration for her company’s cookie brand, “Love My Gluten Free Cookies,” stemmed from her clients’ (and her own) frustration with the gluten-free products on the market. Many of the celiac or gluten-sensitive people Eide talked with seemed to think they had to give up flavor when they gave up gluten. “It took me about 30 tries to come up with a recipe I thought I could market and that tasted good,” Eide says. “Once Roger, my husband and business partner, realized it was a good product and that it had value, we decided to pursue this together.”
The cookies are certified by the Celiac Sprue Association and can be found in co-ops, health clubs, hospital cafeterias and even the airport. Cookie flavors include oatmeal raisin, oatmeal raisin walnut, oatmeal chocolate chip and oatmeal chocolate chip pecan. They come individually wrapped on location, but can also be found at prairiekitchen.com in packs of six.
For the future, Eide hopes to see Prairie Kitchen expand to a broader region. She’d also like to release new flavors and other gluten-free products. There’s no doubt that Eide’s dedication to delicious-tasting cookies will also be found in whatever new flavors she cooks up. “After all,” Eide says on her website, “isn’t that why we eat cookies? Because they taste good.”
