These bite-sized Bundtinis are sold by the dozen for $16.50 at Nothing Bundt Cakes in Eden Prairie.

Forget cake pops. Forget those elaborate cake sculptures covered in rock-hard fondant. The bundt is back, baby. And you don't even have to turn your oven on: Nothing Bundt Cakes, which opened October 25 in Eden Prairie, specializes in bundt cakes baked fresh daily and sold in various shapes and sizes.

The shop's co-owners Jill Tullemans and Patty Balster, who have been friends since high school, were both looking for a career change when they tasted a Nothing Bundt Cake, and suddenly, they were inspired to take the leap. "Once we tasted the cakes, it was a no-brainer," Tullemans says of their decision to bring the Nothing Bundt Cakes  franchise to Minnesota.

The bakery features 10 different bundt cakes—including one seasonal flavor and nine signature flavors—in a variety of sizes, from bite-sized bundtinis sold by the dozen to 10-inch cakes that can be decorated for almost any occassion. Tullemans' personal favorites are red velvet, which has just a hint of cocoa, and a classic carrot cake with pineapple. The flavor of the month for November is Pumpkin Spice, and December's feature is Gingerbread.

Nothing Bundt Cakes also sells balloons, cards, party favors and other gifty items, making it a perfect pit-stop pre-party, says Tullemans, who lives in Eden Prairie. The shop is celebrating its grand opening by donating 20 percent of its proceeds on November 14 to PROP and hosting a family fun day from 11 a.m.–2 p.m. November 16 with free samples, give-a-ways and more.
